The Palm Mojito

What can we say about a damn fine mojito that isn’t already transparently obvious to anyone familiar with them? They’re a thing of simple, yet complex beauty; a perfect hammock cocktail. Alongside the Cubano, one of Cuba’s greatest gifts to the gustatory globe. Any attempt to tinker with the simple formula runs the risk of ending in ruin, so we’ve left well enough alone. Most versions these days opt for white sugar and white rum, but for the Palm Mojito we prefer the mellow, rounded richness and caramel tones imparted by Palm Sugar Rich Simple Syrup, which is probably closer to the original version the Caribbean pirates were tossing back. Strap on an eye patch, and if you’ve already got a wooden leg, it makes a great muddling stick.

1 oz Palm Sugar Rich Simple Syrup
2 oz light rum
2 oz fresh lime juice
8 mint leaves
Splash club soda




Muddle syrup, lime juice and mint; add rum, ice and club soda and stir. Garnish with a lime slice and sprig of mint. Quaff. Repeat.
