Blank Slate Kitchen Black Pepper Rich Simple Syrup

This syrup was inspired by a trip to the spice island Zanzibar, and the incredible black peppers encountered in Cambodia and Borneo; it was the genesis of Blank Slate Kitchen, and if we had to pick one syrup (shhh, don’t tell the others), this is still our favorite. It combines the sharp bite of black pepper with the caramel richness of palm sugar for an intriguing and satisfying addition to your cocktails, desserts, and breakfasts.

We make our Black Pepper Rich Simple Syrup from the finest quality organic and fair-trade ingredients we can find. It starts with all-natural palm sugar; unlike white sugar, this has lots of naturally occurring flavor that isn’t filtered out, with warm caramel and butterscotch tones that go hand in hand with black pepper. Palm sugar is made from the nectar of various palm trees, is unrefined and completely natural, has a lower glycemic index, and is rich in nutrients and vitamins. Additionally, palm sugar is considered to be the most sustainable sweetener in the world.

We add lots of freshly ground organic black pepper for a rich, spicy pepper kick. No artificial flavorings here – nothing but the highest quality, real ingredients. We also add a touch of organic citric acid, which helps to stabilize and preserve it, so that it won’t crystallize and it will last for a year or more. It’s good for you – well, as good as sugar can be, but let’s face it, we all need a little sweetness in our lives – and it’s good for the world.

It’s Rich because we use twice the amount of sugar as in a standard simple syrup. What does this mean? Well to start, one bottle goes much further than a regular simple syrup. It also has a much deeper and more intense flavor from the palm sugar, which imparts rich molasses and caramel flavors instead of just sweetness.

What can you do with it? Anything you can imagine; it’s a tool to help unlock your culinary creativity. Black pepper is surprisingly good in unexpected places, such as desserts and coffee, tea and hot chocolate. As a starting point, here are some suggestions, and recipes can be found at the bottom:

  • Cocktails
  • Drizzled over ice cream, berries, or other fruit – black pepper and strawberries are fantastic
  • Drizzled over breakfast – waffles, pancakes, oatmeal, even bacon
  • In coffee, tea, hot chocolate and smoothies
  • Homemade soda
  • Add some moxie to recipes for ice creams, custards, whipped creams, candies, cookies and cakes; replace corn syrup or honey with a Rich Simple Syrup

The not-so-fine print:

  • Our syrups are vegan and gluten-free
  • Some separation of syrup will occur, shake well before use
  • Refrigerate after opening
  • Minimum two year shelf life; under normal conditions, syrups will be fine long past that, but the flavor may degrade slightly over time
